Steamed pork spareribs is a staple in our household. Marinate spareribs in cornstarch for 10 mins and rinse. Dry the ribs, add fermented black beans, shao xing wine, salt, sugar, ginger, garlic, scallions, white pepper, oyster sauce, cornstarch and sesame oil. Usually I had sliced thai bird chilis to make it spicy but the kids don’t like the heat, so I swapped that out for goji berries to add a little sweetness instead.
